Toffee Chocolate Almond Cookies

Norma’s Notes 
  • Splurge and use butter.
  • Parchment paper is a MUST.
  • I only bake mine about 9 minutes - if you overcook these the toffee bits will scorch, and you will have to eat the whole pan yourself, and this won’t end well.
  • Let them set ten minutes before moving.
Ingredients
1 cup butter, softened
3/4 cup brown sugar, packed
1/2 cup granulated sugar
1 egg
2 tsp vanilla extract
2 cups flour
1 cup rolled oats
1 tsp baking soda
1/4 tsp salt
1 pkg toffee bits
1 cup milk chocolate chips
3/4 cup slivered almonds

Directions
  1. Preheat oven to 375. 
  2. Line baking sheets with parchment paper. 
  3. Beat butter, brown sugar, granulated sugar, egg and vanilla together in a large bowl using an electric mixer on medium speed until creamy.
  4. Combine flour, oats, baking soda and salt in a separate large bowl. 
  5. Add to butter mixture, beating until blended. 
  6. Stir in toffee bits, chocolate chips and almonds. 
  7. Drop by tablespoonful's (15 ml) onto prepared baking sheets.
  8. Bake in center of a preheated oven for 8 to 12 minutes, or until lightly golden. 
  9. Let cool for 5 minutes, then transfer to rack and cool completely.
