Lemon Meringue Pie

Norma’s Notes
  • I don't care for the bitter, artificial taste that boxed lemon pie filling has, so I tried this recipe and the lemon flavor is delicious.  
  • If you are a lemon lover this recipe is for you.  
  • The extra effort is worth it.
Ingredients

1 cup sugar
2 tbsp flour
3 tbsp corn starch
1/4 tsp salt
1 1/2 cups water
2 lg lemons, juice and zest
2 tbsp butter
4 egg yolks
4 egg whites
6 tbsp sugar
1 baked pie shell

Directions
  1. Mix sugar, flour, cornstarch and salt together.
  2. Add water, lemon juice and zest.
  3. Cook on stove or in microwave until hot then add one half cup of this mixture to the beaten egg yolks and whisk.  
  4. Add egg mixture into the rest of the filling and cook until thick and bubbly. 
  5. Add butter.
  6. Pour into cooked pie shell.
  7. Beat egg whites, gradually adding sugar. Pile on pie.
  8. Bake 10 - 12 minutes at 350 until meringue is brown.
