Norma’s Notes
- I don't care for the bitter, artificial taste that boxed lemon pie filling has, so I tried this recipe and the lemon flavor is delicious.
- If you are a lemon lover this recipe is for you.
- The extra effort is worth it.
Ingredients
1 cup sugar
2 tbsp flour
3 tbsp corn starch
1/4 tsp salt
1 1/2 cups water
2 lg lemons, juice and zest
2 tbsp butter
4 egg yolks
4 egg whites
6 tbsp sugar
1 baked pie shell
Directions
- Mix sugar, flour, cornstarch and salt together.
- Add water, lemon juice and zest.
- Cook on stove or in microwave until hot then add one half cup of this mixture to the beaten egg yolks and whisk.
- Add egg mixture into the rest of the filling and cook until thick and bubbly.
- Add butter.
- Pour into cooked pie shell.
- Beat egg whites, gradually adding sugar. Pile on pie.
- Bake 10 - 12 minutes at 350 until meringue is brown.
