Blueberry Pie

Norma’s Notes

  • The Hubs often returns home with food items he was given or has purchased while travelling through rural Saskatchewan for work. On this occasion, he bought blueberries.  
Ingredients

1 1/4 cups boiling water
1 cup of sugar
5 cups washed blueberries
1/2 cup cornstarch (dissolved in cold water) 
*add more if needed, the mixture should be thick when cooked as more juice will come out of the berries as the pie is baking 
1 tsp butter
2 tsp fresh squeezed lemon juice
2 double-crust pie shells

Directions
  1. Boil water and sugar together for five minutes.
  2. Add berries and bring to a gentle boil.
  3. Add in dissolved cornstarch, cook an additional five minutes stirring often.
  4. Remove from heat and stir in butter and lemon juice.
  5. Cool and pour into pie shells.
  6. Add top pie crust and bake for 45 minutes at 350 degrees.
  7. Serve as is or with cream or ice cream.
Recipe makes enough filling one deep-dish pie or two foil pie plates.
