Norma’s Notes
- The Hubs often returns home with food items he was given or has purchased while travelling through rural Saskatchewan for work. On this occasion, he bought blueberries.
Ingredients
1 1/4 cups boiling water
1 cup of sugar
5 cups washed blueberries
1/2 cup cornstarch (dissolved in cold water)
*add more if needed, the mixture should be thick when cooked as more juice will come out of the berries as the pie is baking
1 tsp butter
2 tsp fresh squeezed lemon juice
2 double-crust pie shells
Directions
- Boil water and sugar together for five minutes.
- Add berries and bring to a gentle boil.
- Add in dissolved cornstarch, cook an additional five minutes stirring often.
- Remove from heat and stir in butter and lemon juice.
- Cool and pour into pie shells.
- Add top pie crust and bake for 45 minutes at 350 degrees.
- Serve as is or with cream or ice cream.
Recipe makes enough filling one deep-dish pie or two foil pie plates.
