Banana Chocolate Chip Muffin, Muffin and Coffee

Norma’s Notes
  • No overripe banana should ever hit the garbage can - freeze them and make these delicious muffins to have on hand for breakfast or lunch.  
  • These muffins freeze well and are great to pull out the night before and serve on a cute little platter to your company for breakfast.  
Ingredients

4 large bananas mashed
1/2 cup white sugar
1 beaten egg
3 tbsp sour cream
3/4 cup milk chocolate chips
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup oatmeal
1 1/2 cups flour

Directions
  1. Mix mashed bananas, sugar, sour cream, egg and margarine. Set aside.
  2. In a separate bowl, mix baking soda, baking powder, salt, oatmeal and flour.
  3. Gently mix the wet and dry ingredients along with the chocolate chips.
  4. Divide into greased muffin tins and bake at 325 degrees for 18 minutes.
