Norma’s Notes
- No overripe banana should ever hit the garbage can - freeze them and make these delicious muffins to have on hand for breakfast or lunch.
- These muffins freeze well and are great to pull out the night before and serve on a cute little platter to your company for breakfast.
Ingredients
4 large bananas mashed
1/2 cup white sugar
1 beaten egg
3 tbsp sour cream
3/4 cup milk chocolate chips
1/3 cup melted butter
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1/4 cup oatmeal
1 1/2 cups flour
Directions- Mix mashed bananas, sugar, sour cream, egg and margarine. Set aside.
- In a separate bowl, mix baking soda, baking powder, salt, oatmeal and flour.
- Gently mix the wet and dry ingredients along with the chocolate chips.
- Divide into greased muffin tins and bake at 325 degrees for 18 minutes.
