Norma’s Notes
- This is the bran muffin recipe I have used for years.
- They turn out great every time.
- Apricots and raisins are optional, I just use raisins.
- Great way to use up extra milk and sour cream.
- Freeze well.
Ingredients
1 1/2 cups wheat bran
3/4 cup flour
1/4 cup sour cream
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 egg
3/4 cup lightly packed brown sugar
1/4 cup oil
1 cup sour milk (1 cup milk with 4 tbsp vinegar)
2 tbsp cooking molasses
1/2 cup raisins
1/2 cup dried apricots - sliced

- Combine bran, flour, baking soda and baking powder.
- Beat egg, brown sugar, oil, milk and molasses together.
- Combine all of the above with the raisins and stir just until mixed.
- Bake 18 minutes at 350 degrees.
