Bran Muffins


         
Norma’s Notes
  • This is the bran muffin recipe I have used for years.
  • They turn out great every time.  
  • Apricots and raisins are optional, I just use raisins.
  • Great way to use up extra milk and sour cream.
  • Freeze well.
Ingredients

1 1/2 cups wheat bran
3/4 cup flour
1/4 cup sour cream
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 egg
3/4 cup lightly packed brown sugar
1/4 cup oil
1 cup sour milk (1 cup milk with 4 tbsp vinegar)
2 tbsp cooking molasses
1/2 cup raisins
1/2 cup dried apricots - sliced

Directions

  1. Combine bran, flour, baking soda and baking powder.
  2. Beat egg, brown sugar, oil, milk and molasses together.  
  3. Combine all of the above with the raisins and stir just until mixed.  
  4. Bake 18 minutes at 350 degrees.
Makes 12 muffins.
