Greek Salad


Norma’s Notes
  • Greek salad is one of my all time favourites. 
  • It is fresh, flavourful and easy to make. 
  • I love making my own dressing with simple ingredients. 
  • Even better in the summer when you use fresh herbs and vegetables.
  • Salt free.
  • I make it with or without lettuce.
  • Salad dressing recipe courtesy of my daughter, Brittany.
  • Dressing can be made in advance and stored in the fridge for a week. 
Salad

Ingredients 
2 cups romaine lettuce, chopped
1 pint cherry tomatoes, halved
1 red onion, sliced into half rounds 
1 unpeeled cucumber, cubed
1/2 pound feta cheese, cubed
1 red pepper, cut into bite size pieces 
1 green pepper, cut into bite size pieces 
3/4 cup pitted olives 

Directions
Cut ingredients as directed and toss together. 

Dressing

Ingredients 
1 tbsp canola oil
1 1/4 tbsp red wine vinegar 
1 large garlic clove, minced 
1 tsp dried flaked oregano 
1 tbsp white sugar

Directions 
Combine ingredients and shake. 
Pour over salad just before serving.

Serves four.
