Norma’s Notes
- This salad is so easy to make and has tons of flavour.
- Add dressing just before serving or serve dressing on the side then you can take leftovers for lunch.
- Toast the almonds for added crunch and flavour.
- Sunflower seeds, pumpkin seeds or dried cranberries can be used instead of almonds.
- A delicious option for a potluck plus the dark green spinach, red onion, green apple and white cheese make for an attractive colour combo.
Ingredients
Salad
4 cups spinach - coarsely chopped
3/4 cup Feta cheese - cubed
1/4 of a lg red onion - slice thinly then cut slices in half
1/2 lg green apple, unpeeled, slice thinly then cut slices in half
1/2 cup sliced almonds
Dressing
1/3 cup olive oil
3 tbsp red wine vinegar
1 tsp finely minced garlic
2 tsp Dijon mustard
1/4 tsp salt
1/4 tsp pepper
Directions
- Prepare and combine salad ingredients.
- Combine dressing ingredients and blend or shake throughly.
- Serve dressing in salad or on the side.
